Our Story

Eminence was founded with a vision to push the boundaries of what Beechworth wines could achieve. While respecting the region's winemaking heritage, we continuously explore new approaches to viticulture and winemaking. Our name reflects our ambition to produce wines of outstanding quality and distinction.

Winemaking Philosophy

低干預（Low Intervention） 、使用天然酵母 、低硫添加 ，追求「新鮮、純淨、俐落」的 Clean Natural 風格 。

釀造工藝

卓越酒莊採用精準釀造技術，結合數據驅動的葡萄園管理。我們使用精密的溫度控制和濕度管理系統，確保每個批次的一致性。葡萄酒在法國和美國橡木桶的混合中陳年，創造出獨特的風味平衡。我們的釀造團隊包括國際獲獎釀酒師。

Terroir

果實來自 Yarra Valley 與 Beechworth 。受山谷風流調節，生長季長且成熟緩慢 。

Winemaker

Erin Frances Pooley ，曾在加州與 Yarra Valley 工作 ，深受 Loire 與 Jura 自然酒影響 。
